Bananas for This Bread
INGREDIENTS
• ½ c. butter or margarine (I even use Country Crock Lite and it is still great)
• 1 c sugar
• 2 eggs
• 2 c. flour
• 1 tsp. baking soda
• ½ tsp. salt
• 1 tsp. (or more for taste) cinnamon
• 3 large bananas, mashed
• 1 c. chopped pecans (if you want)
PREPARATION
Heat over to 350 degrees. Cream the butter and sugar and beat in the eggs one at a time. Mix dry ingredients together and set aside. Beat the bananas and pecans into butter and sugar mixture. Slowly add dry ingredients. Pour into loaf pan that is either sprayed with non-stick spray or greased and floured. Bake for one hour (I actually have to let it sit in the warm oven for about 20 minutes after it’s done to get it just right).
